How about a dianhong? A higher end variety like yunnan pure gold or golden needle won't be bitter at all. It has a gentle aroma and a sweet taste with a really striking bright red color to the tea liquor itself. Because it's a black tea it won't be too light, so it will hold up against sweets, but because it's not very astringent it can also work with the more delicate or savory baked goods.
